Recipe

For those of you who wanted the recipe:

Tomato White Bean Soup

2 tsp olive oil
1 cup chopped onion
3 garlic cloves, crushed
2 cans dice cut tomatoes with basil, garlic, and oregano (puree or leave chunky)
2 cans navy beans, drained and rinsed
1 can vegetable broth
1/4 tsp pepper
1/4 cup grated parmesan cheese

*If you can't find the tomatoes with the herbs use 2 cans of plain dice cut tomatoes and add 3/4 tsp each of dried oregano and basil

Heat oil in large sauce pan. Add onions and garlic; saute` 4 minutes. Add all other ingredients except cheese. Bring to a boil. Reduce heat and simmer 10 minutes. Ladle into bowls and sprinkle with parmesan cheese.

Fantastic with grilled cheese and smoked turkey sandwiches!

Happy New Year! We do not have any special tradition...we play games and I fall asleep before midnight. Dick Clark really does need to call it quits! My mothers always made black-eyed peas for New Year's Day. It's a southern thing...or perhaps it's just a Texas thing. My dad is originally from Texas. Do you have a New Year's tradition?

I agree about Dick Clark! We always do pork and sauerkraut (it's a German Swiss thing) on New Year's Day!

Thank you for the recipe...I can't wait to try it! We don't have dinner on New Year's Eve...we just make lots of appetizers...we usually do stay up until midnight...but we're always at home!

Hi Stephanie, Haven't been around to the blogs much this week. But I just saw your recipe post and I am definitely going to try it. I just printed it off. I absolutely love Tomato soup. Oh my gosh that looks so good. My mouth is watering. Seriously.

We used to make black eyed peas for New Years but I've just gotten out of the tradition. We had some southern neighors years ago and they turned us on to that. My MIL always says eat cabbage on New Years for a prosperous new year. Hey I'm going to do it. I can use all the help I can get! Can't we all?!!

The soup looks excellent. I will definitely try it. We don't have New Years traditions. We always stay home. We always know when the new year rolls in even if we are in bed because we have neighbors that like to shoot off fireworks. Happy New Year to you and yours.
